New Breakfast

Since I’ve begun my foray into dairy free I’ve struggled with breakfast. I’m so used to food that is milk based at this time of day.

After weeks of porridge I barely tolerate (made with milk alternative), a few tries of millet and some unfulfilling muesli I made a pact with myself to rethink breakfast.

The other day my husband made a divine omelet (he experiments with flavours I never think of). Yesterday I made eggs on toast. Today I made my version of this recipe.

Fluffy delicious pancakes

1C wholemeal flour
1 tbsp baking powder
1/2 tsp baking soda
2 tbsp vegetable oil
3 tbsp raw sugar
1 egg
1/2 tspn salt
1 cup milk alternative (almond, soy, coconut etc)
1/2 tspn vanilla essence
1 tspn cinnamon

Mix it all together. Cook it on the frypan until browned.

Enjoy with what ever topping you like.
